Marvelous Allergen Free Chocolate Bread Pudding! yum :-)

The other day I left out and unwrapped, a plate of our Delicious Delights Chocolate Mini-Muffins on accident.  I hadn’t planned on leaving them out but things like that tend to happen when you have a very energetic 2 year old running around getting into mischief :-)

So I figured since that I had a bunch of somewhat dried out muffins and I don’t like to waste food, I would try my hand at making allergen free bread pudding.  I must tell you, I have never made bread pudding before, nor have I ever seen it made, so I was a bit nervous as I put it all together.

So I looked around online and got the basic idea for the recipe needed.  I don’t like to follow recipes really.  I enjoy getting the basic concept of a recipe and then ad libbing the rest of it.  I’m fairly creative that way :-)

Usually it works out really well for me and this time was no exception!  I made a very yummy chocolate bread pudding that is free of : gluten, wheat, dairy( casein & lactose), soy,eggs,ALL nuts, yeast, fish, artificial dyes and preservatives.  Plus since it uses Delicious Delights chocolate muffins, it also is loaded with essential vitamins & minerals, omegas 3/6/9, and fruits & veggies in it! Yummy and Healthy!

Everything you’ll need

Here is what I came up with :

You need to gather the following ingredients :

 

1 cup banana

2 tablespoon light brown sugar

2/3 cup honey

2 cup rice milk

4 tablespoon butter (for dairy &soy-free use Mother’s or Eden)

24 Delicious Delights Chocolate Mini-Muffins (12 servings/pouches)

 

Pre-heat oven to 350 degrees

 

Start by taking the muffins and breaking them into small pieces on a baking
sheet.  Lay them flat and spread out on
the sheet and put in the oven on warm for a couple hours to help dry them out,
unless yours are already stale/dried.

Once dry take the pieces and put them in an 8×8 baking pan and preheat your
oven to 350 degrees.

Microwave the butter until melted ( don’t let it start boiling) and drizzle it over all the muffin pieces. Add raisins and cinnamon all over to personal taste.

 

In a separate bowl put the bananas thoroughly smushed, like baby food.

Then add honey,  light brown sugar, and rice milk.

Slowly pour the mix over all the muffin pieces making sure to not drown them in the liquid.

The amount of liquid you use will vary based on how stale/dry your muffin pieces are.You want them to be sitting in the milk mixture but not covered in it.  Be sure all the pieces get wet though :-)

Gently stir the mixture, if you stir to hard the will break up completely and you will have a very fine bread pudding rather then a chunky one ( which is the way I like it).

Baking in the oven

 

Then press all the muffin pieces down with a fork. Put the pan in the oven and bake for approximately 40-45 minutes, depending on your
oven your cooking time maybe shorter or longer.

Hot, Fresh Chocolate Bread Pudding

 

Allow to cool slightly and serve warm.

Tastes great warm with dairy free ice cream or cold from the fridge with
caramel sauce.  Marvelous!

Gluten and gluten-free are commonly used terms in our society today, but what are they really?

The term gluten originates from the Latin word for glue, which is one way to describe what gluten actually is. Gluten is a protein composite that is found in foods that were processed from wheat, barley, rye and other grains/grass in the same family. Gluten is what allows dough to be stretchy, and kind of acts like glue by sticking everything together helping it keep its shape.

Gluten can be extracted from wheat flour dough by working it in your hands under cold water, because it is not water soluble. The cold water will dissolve the starch in the dough, leaving the gluten behind. Once the gluten is dried it can be put into be used for many things including an additive to dough for better rising and in imitation meats.

Gluten-free is what it sounds like, to be free of gluten. The term gluten-free is used to refer to a diet that consists of no gluten or gluten containing products. People on a gluten free diet eliminate many breads and pastas from their diets as well as cookies, cakes, and anything else containing regular wheat flour. Gluten-free dieters must be careful to read food label thoroughly to check for wheat or other hidden sources of gluten in any of the foods they want to eat before eating them. Many food products in the U.S. have allergy warnings on them stating below the ingredients what major allergens they contain, however not all products are labeled so careful attention is necessary.

Gluten-free dieters also need to watch the products that they have been eating knowing that they are gluten free, because sometimes companies will change their gluten free products without warning, usually due to the company trying to save money. Gluten-free products can be more expensive to produce and therefore less profitable for the companies making them.

Most people who are on a gluten-free diet are on it because they medically need to be. Celiac Disease is one of the top medical reasons for a person to be on gluten-free diet. Some people are allergic to gluten and others have sensativities to gluten, which is not considered a “true” allergy, but causes the person discomfort none the less. Gluten has been tied to many physical ailments including arthritis, nerve pain, irritable bowel syndrome, ADD/ADHD, exsyma, and many more. The estimated number of people who have Celiac disease is 4 times as many as it was half a century ago.

The general theory behind the overwhelmingly large amount and increase of the number of people who are sensitive to gluten is actually two-fold. The first part being that in general our diets contain an extremely large amount of red meat and very limited fruits and vegetables, which negatively affects the body’s immune system and immune response. Celiac disease is an autoimmune disease, so damaging the immune system can increase the risk of developing it at some point.

It has been suggested that someone without Celiac disease, but with the genes to develop it, may be able to prevent it by eating the right healthy and balanced diet. The most important part being that it is balanced at a ratio of no more the 30% red meats and as close to 70% fruits and vegetables as possible. The other part of the theory for increased number of people with some level of gluten sensitivity is simply that doctors are looking for it more often and more actively then they were in the past.

How Food Allergies Effect Behavior

Food has a profound affect on our bodies. These affects can be good or bad depending on the food and on a particular person’s body’s reaction to whatever they’ve eaten. Most people are aware of the reactions caused by food allergies, hives, swelling, trouble breathing, abdominal pain and things of that nature. However the knowledge that foods can affect behaviors, moods, focus and attention.

Just as there are foods that are more likely to cause allergic reactions, there are certain foods that are more likely to cause a negative affect on behavior and moods. Not surprisingly the foods that are most likely to cause allergic reactions are also the most likely to cause behavior and mood problems.

Dairy, corn and gluten are on the top of the list along with artificial dyes. Numerous studies have linked artificial dyes to behavior problems and difficulties for many years. There has also been a lot of research and documentation on the effects of dairy, corn, yeast, gluten, soy, dyes and preservatives.

All of the cases that were documented showed a clear and obvious link between foods and behavior and mood changes. Some of the behaviors caused by food sensativities, as it is usually refered to, are being overly emotion or sensitive, anger or aggression, sloppy or illegible handwriting, inability or reduce abilty to draw simple pictures, bouncy or hyperness, and lack of attention and ability to focus. These reactions are usually seen in children, but can appear in adults and are usually very noticeable in any age group.

Since many of these symptoms can easily be confused with ADD/ADHD symptoms or simply a child being angry or stubborn it is important to rule out the possibility of a food sensitivity before treating them with medication that could easily harm them. One of the most efficient ways to discover an unknown food sensitivity is by doing a multiple food elimination diet.

Essentially a person eliminates all possible allergens from their diet and eats only honey,fresh chicken, turkey, fruits and vegetables with the exception of citrus, strawberries, nightshade family membersand soy. After being on this limited diet for 3 or 4 days the person dieting may begin to see improvement in the areas of mood and behavior that they thought might be from a food sensitivity, provided they do in fact have a food sensitivity.

After 7 days of being on the limited food diet there should be significant improvements that are clearly noticeable by the person dieting and those around them daily. If after 7 days there has been no improvement and no cheating on the diet has occurred, it is almost certain there are no food sensativities.

If there were great improvements in mood, behavior, focus and/or attention areas the next step is to reintroduce eliminated foods one by one into the diet. They recommended method is to give a large amount of the new food at breakfast , lunch, dinner and before bed and carefully watch for changes in behavior.

Many food sensativies cause a change within 1 hour of consumption but some can take around 24 -48 hours. It is important to only reintroduce one food at a time and to wait 3 days before trying the next new food. If the new food doesn’t cause any reaction the dieter may continue eating that food as part of their daily limited diet.

The best order in which to reintroduce the foods is to start with dairy followed by ( in order):

gluten,
corn,
eggs,
and yeast.

After those the dieter can pretty much decided their own order until they’ve reintroduced all of the eliminated foods or have a specific food for each of the symptoms that improved during the first 7 days of the diet.

It is important to note that the multiple food elimination diet can be rather difficult to stick to at first and if being done on a child, it is highly recommend that the child’s entire household participate in the diet as well to encourage the child to stick with it.

The other benefit of the whole household being on the diet is that many parents find they themselves have a food sensitivity that they didn’t know about. Often their food sensitivities are linked to an ailment or pain that they have had for years with little or no explanation of why they’ve had it.

FDA Gluten-Free Labeling Standards

If you’re as heavily into gluten-free products as we are, then you probably already know about the FDA proposed rule on labeling practices for those who say they produce gluten-free products.

We have less than 5PPM of gluten in our products. That is FAR less than a lot of products which claim to be gluten-free but are really just using the very minimum amount of gluten that the FDA allows.

Currently, the FDA has NO regulations on what products can be labeled as gluten-free.

Some say that even having 20PPM is acceptable, but there are some people that are very sensitive and even having 20PPM would be too much.

Our official stance is this:

200 ppm should be the max and that labels should say Gluten free with less than 20ppm or gluten free with less than 10 ppm or even gluten-free with less than 5 ppm so that people can make their own INFORMED choice about gluten free products depending on their own personal sensitivities.
